As some of you may have noticed, I mentioned in one of the comments below that I am not a big fan of coconut. This is very true, however, I don't think it's fair that those fine individuals who do love this exotic fruit should have to suffer just because I don't like the flavor. Mango & Coconut Cupcake!
I had many taste testers on hand to reassure me that this cupcake is indeed delicious. It's cake is made with coconut milk, and a puree of fresh mangos. It's frosting is incredibly fluffy and is also made with a heavy dose of coconut milk. The cupcake is then topped with a stick of dried mango and toasted coconut.I do realize that coconut is an essential ingredient to many delicious deserts, and one day I may come around, but for now the only place I like any coconut is in my pina colada.
