I often get requests for cupcakes that are not on the menu, and most of the time I'm too busy, and not able to accommodate the persons requests. However, this past couple days I've been so refreshed from my week of R & R that I decided to take up the challenge. One of the cupcakes was a Vanilla & Raspberry Cupcake, with a Chocolate Mousse Filling, and the other was a Cannoli Cupcake.
I had a lot of fun mixing up the regular cupcake routine, and was also shocked (but not really) at how amazingly delicious both of them turned out. That's why, for this next month (July 11th-August 13) I'm offering them as Limited Edition Cupcakes!!
The base of this cupcake is a moist vanilla cake that's been piped full of homemade bittersweet chocolate mousse. It's topped with bright pink vanilla frosting and a fresh raspberry.
The cake is a very light sponge cake that's been brushed with a little bit of fresh squeezed orange juice and Grand Marnier. It's then piped full of homemade ricotta based cannoli filling, and topped with a fluffy vanilla buttercream frosting and chocolate dot.
